Beginner-proof pumpkin soup

Pumpkin soup is one of those winter staples that every mum/grandmother/great-grandmother has a special recipe for. It doesn't require any fancy kitchen gadgets and is pretty much fool-proof so it is perfect for beginners!

Soups are also a great option for meal-prep: you can make large batches and freeze in advance and heat up as you need. Make yourself some yummy Pumpkin Bread at the same time and you've got yourself the perfect healthy lunch or dinner.

Tip: You may like more or less spice depending on your tolerances, so for your first attempt add these in slowly, mix in together and taste before adding more. For those that love a little kick; you can add in chilli powder too.

Ingredients:

 1 Small butternut pumpkin
 ½ cup Coconut cream
 ½ tsp Ground cinnamon
 ½ tsp Ground cumin
 ¼ tsp All-spice
 ¼ tsp Ground cloves
 ¼ tsp Ground coriander
 2 Cloves of garlic, crushed

Instructions:

Chop the skin off and scoop out the seeds of the pumpkin before chopping into roughly 5cm chunks.

Either steam or boil pumpkin pieces until very soft and discard the water.

If using a NutriBullet or Smoothie-maker, allow to cool completely before zooshing in batches. Return pumpkin puree to saucepan and add coconut cream and spices over medium/high heat.

*remove from hotplate before the soup boils - or you'll have pumpkin everywhere!
