Basic Veggie Soup!

Use your end-of-the-week leftovers to make a delicious soup!

After a week of nursing sick babies (both girls at different times with a high temperature!) today I’ve got the snuffles myself (and a man with the ‘Man Flu’). So, sore throats in need of some love I used my 'end-of-the-week' veggies and made up a basic soup, which was both super tasty and soothing!

On another note, I was super happy to be able to get my hands on ‘Mastering Your Mean Girl’ by Melissa Ambrosini this week. Although I’ve (mostly) got a handle on my inner nasty pasty, this book puts into words things that I have been personally working through for the past few years. If you’re struggling with self-esteem, self-confidence or self-love issues I highly recommend this read from an incredibly inspiring Aussie author and fellow IIN graduate!

Basic Veggie Soup

Ingredients:

 1 Large Zucchini
 3 Large white squash
 1 Brown Onion
 2 Celery stalks
 4 Carrots
 2 Garlic Cloves
 4 cups vegetable stock

Instructions:

Wash, peel & chop your veggies into chunks while your pot heats up

Put onion, garlic and 1/4 cup water into pot first, stirring until onion softens

Add everything else and bring to boil, before reducing heat and covering. Allow to cook for 20mins, stirring occasionally

Puree with a stick mixer, food processor or blender, add a little salt/pepper and enjoy!

* If you're using something like a NutriBullet (or other smoothie maker) ensure you allow this to COOL COMPLETELY before processing.
