Chocolate + Banana Nice Cream (dairy-free ice-cream!)

Who doesn't love ice-cream? Here's my upgraded NICE CREAM alternative thats dairy & sugar-free, but still sweet, creamy and perfectly refreshing for a hot day!

Seriously easy & seriously good!

Enjoying a nice-cream outside with the twins every afternoon has always been a really nice way to end the day. We have played around with loads of different flavour combinations, but hands down the crowd favourite is chocolate. No real surprises there!

So moving into the warmer months again for 2017, here is our all-time favourite, guilt-free chocolate NICE CREAM!

Loving Earth Cacao PowderBrand highlight: since upgrading my cacao powder to Loving Earth - this recipe has gone to a whole new level of velvety chocolate awesomeness! If you can't get your hands on Loving Earth, any CACAO brand is fine.

Just note the difference between COCOA (heated, more refined) and CACAO (not heated, much higher nutritional value).

Vegan Choc-nana Nice Cream

Ingredients:

 1 Large (2 small) ripe/overripe bananas (opt 1)
 1 Large (2 small) ripe frozen bananas (opt 2)
 200 ml Coconut cream (opt 1)
 1 tbsp Heaped cacao powder (cacao)
 ¼ tsp Vanilla extract
 Silicon or plastic ice-cream moulds (for option 1)

Instructions:

OPTION 1: on a stick (serve after 24hours, 6-8 serves)

Zoosh everything together and pour into ice-cream moulds. Freeze overnight before serving.

OPTION 2: in a bowl (serve immediately, 1-2 serves)

Chop frozen banana into chunks before zooshing with cacao powder and vanilla extract (no coconut cream or it will be watery!)

NOTES:

You may want to use less cacao powder if it is too rich(depends on the brand of cacao powder). Also, if your banana is not quite ripe (sweet) enough, you could add in a little rice malt syrup to sweeten if needed.
