Cos Lettuce Tacos

 

I loved tacos as a kid! Either the 'stand and stuff' or soft varieties, it always made for a fun, slightly festive dinner that was so delicious and satisfying.

Annndddd then I read the ingredients list on the taco kits! 

The seasoning packets and the tacos or burritos themselves are full of nasty additives that make them stay fresh while sitting on the shelf.  Additionally, for someone that generally avoids both dairy and wheat/gluten, tacos are pretty much off the table!

Unless you make your own with a few alterations to take out the cheese and the wheat wraps! I have been making these tacos for a few years, but they are so good that I have never been quick enough to get a photo before they're eaten! They are that good. 

If you are making this recipe for your toddlers - don't waste your time trying to help them hold these like tacos! Just shred the lettuce and put mince on top. 

Scott is not a fan of cumin, so I keep it pretty mild for him. Personally I would love to add a little more (like double), so if you don't mind the flavour of cumin, go for gold. 

HOT TIP: Grate carrot into mince-based recipes! It makes the meat stretch heaps further, so if you are on a budget and the premium mince seems a little expensive, now you can afford it.

Ingredients:

 500 g High quality beef mince (lean/topside)
 1 Carrot, grated
 1 Brown onion, finely diced
 1 Clove garlic, crushed
 1 tbsp Extra virgin olive oil (or ghee)
 ¾ cup Baby spinach leaves
 ½ tsp Ground cumin
 2 tsp Paprika
 ¼ tsp Dried oregano
 ½ Punnet cherry tomatoes, halved
 1 Red capsicum, diced
 46 Large cos lettuce leaves, washed
 Nutritional yeast flakes (to serve)

Instructions:

Cook mince, onion, carrot, garlic and olive oil to a large frypan/skillet on medium/high heat until mince is browned all over.

Reduce heat and add spinach, tomatoes, capsicum, paprika, cumin and oregano and continue cooking until spinach is wilted.

Lay out cos lettuce leaf and spoon mince on top. Sprinkle a little nutritional yeast over the top and serve immediately.

Mix it up and add in some extra fillings; like cucumber, mushrooms (cooked into mince), add a little home made tomato sauce...
