Dairy-free Zucchini Slice

 

Looking for something warm, rich in protein & nutrients thats free from gluten and dairy and fits in a lunchbox? Meet the zucchini slice. 

During the last 6 weeks or so we've had this on the menu at least once a week. Its kid-friendly (well my kids love it anyway!) and is highly versatile. For example, you could add 1-2 rashers of high quality/nitrite-free bacon or some chopped up asparagus or broccoli.

Ingredients:

 1 Large zucchini, grated
 2 Small brown onions, diced
 8 Eggs
 ¾ cup Almond meal
 1 tbsp Mixed herbs
 2 tbsp Nutritional Yeast (+ more for the top)
 ½ tbsp Extra Virgin Olive Oil
 6 Asparagus spears, chopped OR
 3 Broccolini, sliced

Instructions:

Preheat oven to 180C & coat a shallow baking dish (15x30cm) with the olive oil.

Prepare your vegetables and mix everything together in a large bowl

Pour batter into the baking dish, pressing anything sticking out down. Sprinkle a thin layer of nutritional yeast over the top with a little salt (I use himalayan) and bake in the oven for 30-40 minutes, or until a knife comes out clean. Serve warm with salad.
