Hearty & Healthy Beef Stroganoff Recipe

Easy, family-friendly and perfect for weeknight dinner

I love a hearty, healthy beef stroganoff dinner. Its easy, makes minimal dishes (winning!) and feeds a crowd without too much effort. Before I changed my diet, this was something I used to cook on an almost weekly basis… from a packet.

Nowadays I am a relentless campaigner against those packet sauces, pasta sides and ‘instant’ freeze-dried recipe bases. Why? Because its just one more unnatural, lab-coat made, artificial load of junk that your body simply does not need. There is already more than enough toxic compounds in our life without adding them unnecessarily to our diet.

Just take a look at this popular Australian brand’s ingredient list in their Beef Stroganoff Recipe base.

I’ve highlighted a few of the biggies, but nothing in that recipe list spells out healthy.

  • Glucose Syrup (from wheat) = Sugar. We all know sugar is not a good thing, we eat too much of it. Why is there sugar in this? Beef stroganoff does not need sugar!!
  • Vegetable Oil = Just cheap and nasty unstable, oxidising, inflammation promoting grease.
  • Sugar = Sugar… More sugar?
  • Colour (Caramel 150C) = (according to Chemical Maze)  prepared from GMO sugar cane, sugar beet or cornstarch and ammonium compounds. “HACSG recommends to avoid, may effect the liver, may cause gastrointestinal problems, prohibited in food for infants.” Yikes!

Does any of that really sound worth the advertised convenience in cooking your dinner?

Make your own delicious, healthy beef stroganoff thats sugar-free, dairy-free (if you want it to be), low-salt and most importantly; additive and chemical junk-free. With a few basic whole food ingredients (you probably already have in your pantry!) you can ditch the rubbish and make your own from scratch in the same amount of time.

Healthy Beef Stroganoff Recipe

Ingredients:

 400 g Premium beef strips
 1 Brown onion
 5 Mushrooms
 1 Big handful baby spinach leaves
 2 ½ tbsp Smoked paprika
 2 Cloves garlic, crushed
 2 tbsp Red wine vinegar
 2 tbsp Home made tomato sauce (or puree)
 1 tbsp tapioca
 1 tbsp Extra virgin olive oil
 1 cup High quality beef stock or broth
 3 tbsp (heaped) plain greek yoghurt or coconut cream

Instructions:

In a large frypan, heat olive oil, garlic and onion before adding beef strips and cooking until browned all over.

Add red wine vinegar to the pan and allow to sizzle & evaporate a little.
In a cup, combine tapioca, paprika, stock, tomato sauce and stir/whisk together before adding to the pan along with the mushrooms and spinach.

Just before serving, stir in greek yoghurt or coconut cream. Serve over cooked brown rice, couscous or millet. Enjoy!
