Healthy Chocolate Souffle

Dairy, gluten & refined sugar FREE

This dessert is literally my obsession at the moment – I’ve had this almost every night this last week! It is derived from a recipe in Jessica Sepel’s book The Healthy Life; the latest addition to my little library. Jessica is one of the most amazing and inspiring health authors in Australia at the moment and if you haven’t read her book – do it. Tonnes of awesome recipes and sound nutrition information in an easy to understand format. Highly recommend it!

OK so I am a sucker for chocolate and have a major sweet tooth. Prior to changing my diet excess sugar was my biggest concern, I just couldn’t say no!

Now, with a change in perspective, and the evolution of my taste buds to enjoy a more diverse range of flavours, excess sugar is no longer a problem. I still enjoy something sweet everyday, but it is no longer any kind of pre-packaged sugary drinks, lollies, baked goods or chocolate. Instead I indulge in little guilt-free treats like this, naturally sweet fruit (dates a great) or homemade chocolate.

I promise you won’t be disappointed in this chocolate souffle! Its creamy, spongy, sweet-but-not-too-sweet and satisfies even the strongest chocolate/sweet craving. Plus theres no added sweetener needed, just the natural sweetness from the bananas.

Healthy Chocolate Souffle

Ingredients:

 1 Banana
 1 Egg
 2 tbsp Cacao powder (I love Loving Earth)
 1 tbsp nut butter (cashew or almond)
 ½ tsp Baking powder
 1 tbsp Rice malt syrup (OPTIONAL - I don't use this)

Instructions:

Add all ingredients to a blender/smoothie maker (I make mine with the small cup of my NutriBullet PRO) and zoosh until well combined.

Divide mixture into 2 ramekins (or use a coffee mug!) and bake in oven at 180C for 15 minutes.

Serve topped with shaved/shredded coconut and slivered almonds. Enjoy!
