Healthy Zoodle Bolognese Recipe

Packed with flavour & family-friendly!

Bolognese, aka “spog”, is one of those easy family favourites that you can slap together to feed an army in just a few minutes. Its basically fool-proof (no wonder its a popular choice for home economics classes!) 

In my opinion you cannot go wrong with herbs, spices and tomatoes in anything, so if you’re a raw beginner to cooking clean, whole food recipes, this is a great starting place.

Making your own bolognese sauce need not be a huge task. Just throw in some tomatoes, paprika, herbs and salt and you’ve got the makings of an amazing base that you can use in multiple different ways! The leftovers can either be eaten the same (with zoodles), or with a little creativity you can turn it into health nachos, put it in healthy wraps for lunch, change it up and use a different ‘pasta’ alternative like sweet potatoes, carrots, whatever… the sky’s the limit!

Save yourself a few serves of sugar, preservatives and chemical additives found in pre-made sauces and use up a few basic ingredients you probably already have in your pantry.

Healthy Zoodle Bolognese

Ingredients:

 500 g Lean mince
 1 Brown onion
 3 Cloves of garlic
 2 400g tins of salt-reduced diced tomatoes (or 6-8 fresh)
 2 Handfuls baby spinach leaves
 1 red capsicum
 1 tbsp Extra virgin olive oil
 1 tbsp Dried mixed herbs
 2 tbsp Paprika (smoked paprika is gorgeous!)
 4 Zucchini
 2 tbsp Nutritional Yeast (or parmesan cheese)

Instructions:

Heat oil, garlic and onion in a large frypan. Add mince and cook thoroughly

Add mixed herbs, paprika, tomatoes, capsicum and spinach and simmer until spinach wilts and sauce thickens

While mince is simmering, wash and slice zucchini into noodles (use a veggie spiralizer or mandolin)

Lay out the Zoodles in between some paper towel and sprinkle with salt. Cover with another layer of paper towel and roll up, squeezing the excess moisture out.

Serve topped with mince and parmesan cheese (if using)

Feeding an army? trying adding some grated carrots into the mince mix – it will boost your veggie serves for the day and make the recipe stretch (it will already feed a family of 4 comfortably).
