Honey Soy Garlic Stir fry

Protein, healthy fats and loads of veggies .

I love stir fry dinners, especially on the nights when you just need something quick, easy and ‘no fuss’. I always try to cook once and eat twice, e.g. I cook Monday and the leftovers are dinner for Tuesday. 

Versatile recipe (Vegan option!)

Whether you’re vegan or not, this recipe is only a handful of ingredients and is the perfect balance of protein, loads of veggies and a good amount of healthy fats.

I used to be a sucker for the stir fry packets with the frozen sauce included. Except they always have tonnes of sugar, preservatives and other junk that you really don’t need to bring into your body!

It really is absolutely no extra work if you get a good frozen packet of veggies (without the sauce sachet) and add in your own flavouring, from ingredients you’ve probably already got in the fridge and pantry anyway.

Honey soy garlic stir fry recipe

Ingredients:

 500 g Firm tofu OR (2) chicken breast fillets
 1 Large onion
 1 Large bag of frozen oriental stir-fry veggies
 3 Small pan choy/bok choy, chopped
 ½ Raw cashews
 1 tbsp Coconut oil
 2 Garlic cloves, crushed
 1 tbsp Honey (or rice malt syrup if strict vegan)
 2 tbsp Tamari (gluten-free soy sauce)

Instructions:

Heat coconut oil in a large wok and cook chicken (or tofu) until lightly browned.

Toss in everything else, mixing through so that all veggies and protein is coated in sauce. Cook over medium heat until veggies are completely defrosted, but not too soft.

I usually serve alone, however you can serve over cooked brown rice, quinoa or millet. You could also serve with soba noodles (gluten-free buckwheat noodles!)
