Perfect Cheesy Kale Chips (dairy-free!)

If you’ve been sifting through health websites you would have seen kale (and kale chips!) feature frequently. Its packed with nutrients and often referred to as a ‘superfood’ but more than that, its perfect tough fibrous texture makes it ideal for turning into a crispy, salty indulgence that you can feel good about.

For some, giving up the packaged snack isle is one of the toughest things to do. Its convenient, cheap and satisfies both salt/crunchy cravings quickly. Sadly though, as with anything from a packet, all of them are heavily processed, covered in vegetable oils and all kinds of chemical preservatives. Be especially careful with the brands with health claims, that mention whole grains, lighter/lite choices etc. Always read your labels. Or save yourself some time at the supermarket, grab yourself a bunch of kale and whip up some of your own kale chips (or ‘crisps’)

Make your own Perfect Cheesy Kale Chips

Making your own Kale chips is easy. But getting them perfectly crispy with just enough salt (but not too much!) can be a bit challenging. Here’s my top tips for the best results, every time!

  • Use lower temperatures.

    My oven is old and has a dodgy seal, so heat escapes constantly while it is on. This makes for very uneven cooking! If you bake your kale chips at a normal-high temperature, the thin outer leaves will burn, while the thicker stems remain moist and bendy. For most fan-forced ovens, 150-180C is perfect, but if your oven cooks unevenly like mine, the lower temperature is best.

  • Turn your kale over 1/2 way through cooking.

    This way any oil sitting at the bottom of the tray doesn’t stop it from crisping up.

  • Choose organic varieties.

    Just looking at the shape of the kale leaves you can see how pesticides and sprays are easily caught in them, and tough to wash thoroughly. You still need to wash your kale before cooking regardless – bugs and dirt get stuck too!

  • Play around with flavourings!

    My favourites include nutritional yeast (see below!), paprika, parmesan cheese if you’re into dairy, turmeric or just plain sea salt.

Perfect Kale Chips Recipe

Ingredients:

 10 Large leaves washed, organic Kale (1/2 bunch)
 2 tbsp Nutritional yeast flakes
 1 tbsp Extra virgin olive oil
 1 pinch salt

Instructions:

Preheat your oven to 150C and line a large baking tray with baking paper.

Chop your kale into bite-size pieces and place in a plastic bag. sprinkle in yeast, oil and salt and seal and shake the bag until kale is coated.

Spread kale over baking tray and bake for 5-10 minutes, turn over and bake for another 5-10 minutes. Keep checking and removing any kale chips that cook faster (smaller pieces, thinner sections) as they start to brown.

Serve immediately. These can be stored in an air-tight container for up to a week, but they may go soggy after just a couple of hours if not cooked until properly crispy.
