Raw Vanilla & Goji Bites

Easy, portable, satisfying afternoon energy boost

3pm energy slump? These little parcels of ‘pick-me-up’ are life savers. They are one of my favs to carry me through the afternoon until dinner and they go great with a cup of herbal tea!

Raw Vanilla & Goji Bites

Ingredients:

 1 cup Cashews
 1 cup Desiccated coconut
 1 Lemon (both rind & juice)
 1 tbsp Vanilla essence
 2 tbsp Dried Goji (wolf) berries
 2 tbsp Rice malt syrup or maple syrup
 2 tbsp Coconut oil

Instructions:

In a food processor/blender (zoosher) blend dry ingredients then add wet and combine with a spoon or your hands into a firm dough.

Roll mixture into bite-size balls between the palms of your hands, then roll into desiccated coconut to coat. Refridgerate for at least 1 hour before serving.

Alternatively you could also coat your bites in some roughly chopped goji berries or some chia seeds!
