Tangled Thai Chicken Salad

Don't love salads? I don't like soggy lettuce & tomato soaked in french dressing either. But if you make your salad interesting by adding different textures together you can make an otherwise boring, flavourless lunch something special! 

This tangled Thai chicken salad recipe is nothing particularly fancy and if you use a veggie slicer you can more than halve the chopping work involved. Make this salad up the night before and it will still be just as good the next day.

Tangled Thai Chicken Salad

Ingredients:

 1 cup Mixed rocket & spinach
 1 Large carrot
 ¾ cup Napa/white cabbage
 ½ Large red capsicum
 1 ½ cups Roast chicken
 ½ cup Raw cashews
 1 cup Bean sprouts
For the dressing:
 1 Clove garlic, minced
 2 tsp Tamari
 2 tsp Rice malt syrup
 1 Lime, juiced
 1 tbsp dried mint (or fresh if you have it!)
 2 tsp Coriander (optional)

Instructions:

Mix the dressing ingredients together in a salad bowl

Finely shred the carrot, capsicum, cabbage and chicken breast and add to salad bowl with the dressing. mix the salad together and serve!
